The complete exposure to the sun and the wind, the climatic favorable position between Serristori and Bolgheri and the choice of a non-intensive culture guarantee the production of high quality oil and the environment protection.
The olive-groove is formed by three culture kinds: Frantoio 30%, Moraiolo 70%. The olives are prematurely hand-collected starting from mid-October in order to preserve the taste quality and guarantee a long preservation.
The squeezing takes place in a nearby olive press so that the waiting time is reduced to the minimum.
In this olive press all the operations are made in an oxygen-free environment with an integral extraction system.
The olives are gently squeezed with the latest innovative technologies, and after a short storage in steel tubes the oil is automatically bottled up.
